Check the likely cause first
- Type a short paragraph in Notes and in the affected app to see whether the lag is app-specific.
- Check iPhone Storage for very low free space.
- Review installed keyboards and remove access for any keyboard you no longer trust or use.
Fix it in the safest order
- Close only the unresponsive app, reopen it and restart the iPhone if the delay remains.
